50ml Seven Seals "The Age of Gemini"
20ml Cynar Amaro
20ml elderflower liqueur
20ml rhubarb syrup
25ml freshly squeezed lemon juice
20ml Aqua Faba
5 dash grated tonka bean
The Seven Seals “The Age of Gemini” single malt is part of the Zodiac line and has been finished with a peated Pedro Ximenez sherry wood finish.
Its aroma includes prunes, open fire and salted pretzels with accents of wine. The taste offers toasted almonds, cinnamon, wine, coffee, liquorice, overripe fruit and raisins. This single malt combines smoky and fruity notes to create a complex and appealing taste experience that pays tribute to the zodiac sign of Gemini.
I combined this single malt with Cynar Amaro, elderflower, tonka bean, lemon, rhubarb and a fluffy foam to create the Castor & Pollux cocktail.
Place all the ingredients in a cocktail shaker with ice and shake vigorously.
Strain into a tumbler over ice and garnish with gypsophila.
